Eat Your Broccoli (Stems)

Do you love broccoli? It is without question the favorite vegetable for both of my girls – with cucumbers coming in a close second.

It is no secret that broccoli is a nutritional powerhouse. Just one cup of these babies provide 11% of your daily vitamin A, 135% of your daily vitamin C, 10% of your daily manganese, and 8% of your daily potassium (1) and that is only naming a few! Whether you enjoy them roasted, steamed, or raw, broccoli is a delicious and nutritious veggie.

And what about those stems? Do you cut the florets off of the stems and toss them? If so, you are missing out!

Broccoli stems are just as nutritious as the florets and they taste great too!! If you are new to stems, the simplest and maybe the tastiest way to enjoy them is to roast them.

Begin by holding the stems upright and removing the outer layer. Put those to the side, we’ll use them later!

Next, slice the stems crosswise and mix with a little olive oil, salt, pepper, or whatever seasoning blend you like.

Spread them out evenly on a baking sheet.

Roast at 400* for 35 minutes.


As for the outer layers of the stem, save them for the next time you make broth. I like to keep a bag in the freezer and add vegetable scraps as I go. Then you have them ready for whenever you are!
